Ingredients
2000 gr Sugar
1000 gr Water
1 pc Vanilla
Method

Allow to cool covered with transparent film.

To make the cri-cri take the mixed nuts and blend them with some syrup until they are all well coated. Place in the oven on a baking tray covered with parchment paper and cook at 140°C until the mixed nut sablé is obtained.

Keep in airtight containers.

Preparation

Base for Dark Chocolate Cri-Cri: almonds 1200 gr, pistachios 600 gr, pine nuts 300 gr.

Base for White Chocolate Cri-Cri: almonds 1200 gr, orange 600 gr, a generous amount of cocoa nibs.

Base for Milk Chocolate Cri-Cri: sliced almonds 300 gr, whole hazelnuts 1000 gr, orange 400 gr.

Use, depending on the base, Regina Milk Chocolate 35%, Edelweiss White Chocolate or Mabel Dark Chocolate 56%.

 

Example:

500 gr almonds, 250 gr pistachios, 125 gr pine nuts, 100 gr previously sablé cocoa nibs; take 500 gr of this mixture, warm it slightly in the microwave oven (30-50 seconds on minimum setting) and add 350 gr chocolate (tempered, using the one you require depending on the recipe); use the previously warmed tray.
