Description

Chocolate coating characterised by low content of cocoa paste, which allows it to obtain a particularly light colour. The taste of fresh milk is particularly intense, balanced and only slightly sugary.

Operating recommendations

In chocolatier

The distinct perception of milk that characterises it makes it particularly suitable for chocolate bars, both solid and with inclusions. For pralines, given its light colour and balanced taste without excesses, it lends itself as chocolate base for all ganaches and fillings.  Also suitable to mould hollow shapes.

In pastry

In confectionery, given its balanced nature it is ideal for preparing milk chocolate bases for creams and mousses to be flavoured and in icing.

In ice cream making

Great performance of taste in ice cream, semifreddo cold desserts and sorbets.
