Component 1White Edelweiss and White Vanini Chocolate ice cream with lime
Ingredients
600 g | Whole milk |
200 g | Water |
200 g | Lime juice |
2 | Zest of limes |
100 g | Cane sugar |
25 g | Dextrose |
80 g | Skimmed milk powder |
4 g | Neutral fruit 4 g |
175 g | White Chocolate Edelweiss |
175 g | White Chocolate Vanini |
Method
Mix all the ingredients – except for the chocolate- and pasteurize at 85 °C; as the temperature drops, add the chocolate and leave to cool. Rest for at least 6 hours.
Preparation
Batch freeze and put in the blast chiller for 5 minutes.
Presentation
Decorate with lime slices and white chocolate curls and put in the display case.
