Component 1White Edelweiss and White Vanini Chocolate ice cream with lime

Ingredients
600 g Whole milk
200 g Water
200 g Lime juice
2 Zest of limes
100 g Cane sugar
25 g Dextrose
80 g Skimmed milk powder
4 g Neutral fruit 4 g
175 g White Chocolate Edelweiss
175 g White Chocolate Vanini
Method

Mix all the ingredients – except for the chocolate- and pasteurize at 85 °C;  as the temperature drops, add the chocolate and leave to cool. Rest for at least 6 hours.

Preparation

Batch freeze and put in the blast chiller for 5 minutes.

Presentation

Decorate with lime slices and white chocolate curls and put in the display case.
