Moreska Cream
Description
Strong Cocoa taste; the presence of 14% hazelnut paste softens and rounds the aromatic profile. Vanilla notes. Very Dark chocolate colour.
Homogeneous structure, at positive temperature (showcase) it always mantains the aesthetic yield.
No hydrogenated fats.
Uses
Operating recommendations
To produce chocolate pralines, as a filling to be used alone or added with chocolate (approximately 35%) to give it greater structure. Excellent with the addition of inclusions.
Perfect for flavouring; excellent as glazing profiterole, cakes and small pastry (use at 35°C for better fluidity).
Excellent as fine coating of cakes to be broken down: does not change the structure when brought back to serving temperature.
It can be used for variegations and sauces, both pure and with inclusions, and for fast ice cream recipes.
