Soft, spreadable cream with a compact, uniform consistency. The high degree of fat-reduced cocoa (25%) gives it a distinctive cocoa flavour while the percentage of hazelnut paste (6%) makes it softer and rounds off the aromatic profile. Dark colour of dark chocolate. The exclusive use of shea and sunflower oil gives it a clean taste. Contains no hydrogenated fats.
To be used in a pure form for fillings or with added chocolate to give it more structure. Excellent with the addition of inclusions.
Suitable for boosting the flavour of creams and fillings with a readily discernible taste of dark chocolate. Ideal also as icing for petit fours and cakes, after heating to 30/32°C.
Ideal for preparing Italian-style semifreddo, parfaits, soufflés and glacé icing. Can be used for variegations.
